EDPEN Institute Spring Training 2026

About this event

Join us for this immersive training designed for primary care providers, pediatricians, nutrition professionals, therapists, social workers, adolescent medicine specialists, coaches and all allied health professionals. Residents, interns, and students are welcome to register.

2 Days: Monday, April13th and Tuesday, April 14th, 2026

Breakfast: 6:45-7:45 am | Sessions begin at 8:00 am | Final session ends at 4:30 PM

  • Lauren Muhlheim, Psy.D., FAED, CEDS-C
    Lauren Muhlheim, Psy.D., FAED, CEDS is a psychologist, fellow of the Academy for Eating Disorders (AED), and certified eating disorder specialist (CEDS) and approved supervisor for the International Association of Eating Disorder Professionals (IAEDP). She directs Eating Disorder Therapy LA in Los Angeles. She provides cognitive-behavioral therapy for adults and family-based treatment (FBT) for adolescents and adheres to Health at Every Size® principles. She is certified in FBT for adolescent eating disorders and is the author of When Your Teen Has an Eating Disorder. Dr. Muhlheim has held leadership roles in several professional organizations including the AED, IAEDP LA Chapter, and the Los Angeles County Psychological Association. She is an IAEDP core course instructor. She is passionate about removing the weight bias in evidence-based treatments and training other professionals to deliver such treatments.

  • Asha Davidson, MD, MPH
    Dr. Davidson is a double board–certified adolescent medicine physician who specializes in the care of teens and young adults with eating disorders. She has expertise in co-managing anxiety, depression, and other health conditions and provides a weight-inclusive approach. She enjoys working closely with other clinicians in nutrition and psychology to provide comprehensive, culturally sensitive care for patients and their families. A native Houstonian, Dr. Davidson completed her undergraduate education at New York University and received her medical degree from Texas Tech University Health Sciences Center School of Medicine in Lubbock, Texas. She returned home to Houston to complete her residency in Pediatrics and her fellowship in Adolescent Medicine at McGovern Medical School at UTHealth Houston. She currently practices in the Division of Adolescent Medicine at UTHealth Houston and serves patients in the Greater Houston area. Her clinical interests in Adolescent Medicine include polycystic ovarian syndrome, menstrual cycle disorders, eating disorders, and comprehensive well-child care. Dr. Davidson and her division serve as consultants for teen patients at Children’s Memorial Hermann Hospital. She is passionate about health care access, patient education, and provider education due to the sparse formal medical training regarding eating disorders. Outside of her clinical duties, she is assistant program director for the Adolescent Medicine Fellowship and coordinates the Adolescent Medicine rotation for undergraduate and graduate medical trainees.

  • Katherine Grubiak, RDN
    Katherine Grubiak, RDN graduated from the Coordinated Program in Dietetics at The University of Texas at Austin. She first pursued a career in public health nutrition in San Diego and Los Angeles with a maternal-child focus. It was in the same underprivileged area of Los Angeles where she was serving nutritionally that she began to combine her passions, teaching dance and guiding families of dancers to public health clinic access at a foundation called everybody dance! which was awarded by First Lady Michelle Obama the National Arts & Humanities Youth Program Award. Her involvement in multidisciplinary eating disorder treatment started at the UCLA Arthur Ashe Student Health & Wellness Center. Katie developed a unique style of practicing Family Based Treatment (FBT) that was driven by her collaborations with Dr. Lauren Muhlheim at Eating Disorder Therapy LA. In addition, Katie was the eating disorder dietitian at Optimum Performance Institute in Woodland Hills, California which specializes in DBT-focused mental health residential treatment for young adults. Katie is now the Clinical FBT Supervisor for Side By Side Nutrition and is also a contributing clinician in the development, testing, and training of the new Recovery Record Family App which will connect families and clinicians through technology to provide recovery support between sessions. As a master trainer, she is passing on her style of FBT-informed care to other dietitians by co-leading EDRD Pro's FBT-Informed Eating Disorder Treatment: A Course for Dietitians.

  • Leslie Kaplan, MD, CEDS
    Dr. Leslie Kaplan is a pediatrician specializing in adolescent and young adult medicine. After receiving her medical degree from UCLA, she went on to a Pediatrics Residency at Kaiser Permanente Los Angeles, and an Adolescent Medicine Fellowship at Children's Hospital Los Angeles. A Certified Eating Disorder Specialist (CERDS), she has treated eating disorder patients in various health care settings over the last 25+ years, including primary care teen clinics, college health clinics, and eating disorder treatment programs. Currently, she sees adolescents and young adults in her specialized private practice providing medical care to those with eating disorders.

  • Sarah Torres MS, RD, LD
    Sarah Torres is a Registered Dietitian with over a decade of experience helping individuals and families through meaningful and personalized nutrition care. She earned her undergraduate degree in Nutrition and Foods from Texas State University -San Marcos and went on to complete her Dietetic Internship and Master’s degree in Nutrition and Health Promotion at Simmons College in Boston, Massachusetts. Throughout her career, Sarah has worked with clients across the life span in a variety of settings both at inpatient and outpatient levels of care. She has provided expert nutrition counseling in areas including child and adolescent nutrition as well as prevention and management of complex medical conditions. She has specialized training in the treatment of eating disorders and has supported children, adolescents and young adults with a wide variety of diagnoses and backgrounds. In the past 2 years, she has played a key role in helping launch the UTHealth Houston Center for Eating Disorders PHP and IOP Program, where she has led efforts to expand access to evidence-based treatments across her community. She is involved in the ongoing development of a food service and nutrition approach grounded in Family-Based Treatment (FBT), which is an evolving effort to make nutrition rehabilitation more practical and family-centered. Her work is grounded in compassion and a deep respect for each person’s individual needs as well as empowering families to be full partners in recovery.

  • Dr. Zach Appenzeller, Psy.D
    Dr. Appenzeller is a Licensed Psychologist and Co-Director of the Texas Institute for Cognitive & Behavioral Therapies (CBTTexas) where he specializes in the evidence-based treatments of eating disorders, obsessive-compulsive disorder (OCD), anxiety, mood, and personality disorders. His approach is rooted in science and guided by empathy. Previously, Dr. Appenzeller served as an Assistant Professor of Psychiatry and Behavioral Sciences at McGovern Medical School at UTHealth Houston, where he was honored to receive the Dean’s Teaching Excellence Award. He previously directed the UTHealth Houston Center for Eating Disorders, a comprehensive program in the Texas Medical Center offering outpatient, intensive outpatient (IOP), partial hospitalization (PHP), and inpatient care for adolescents and adults with anorexia nervosa, bulimia nervosa, ARFID, and OCD that impacts food and eating. Dr. Appenzeller has trained under some of the foremost leaders in the field who shaped his deep appreciation for the science, and art of evidence-based treatment. He completed his predoctoral internship at Ascension Alexian Brothers Behavioral Health Hospital’s Center for Anxiety and OCD and Center for Eating Disorders, followed by an NIH-funded postdoctoral fellowship at Baylor College of Medicine’s Menninger Department of Psychiatry and Behavioral Sciences' OCD and Related Disorders Program. Prior experiences span OCD specialty clinics, DBT programs, hospitals, residential treatment, schools, a university child development clinic, outpatient rehabilitation, and other premier CBT practices across the Washington, DC area.

  • Shelly Bar, MD
    Dr. Bar is a highly qualified and experienced physician with double board certification in Internal Medicine and Adolescent Medicine. Dr. Bar completed her Fellowship at Stanford Medical Center and worked as a Clinical Assistant Professor of Medicine at Stanford Medical Center. Dr. Bar provides expert care around the medical complications of malnutrition, eating disorders and disordered eating, with a compassionate and specialized, well rounded approach. She is committed to improving patients' overall mental and physical well being.

Event Learning Objectives

  • Collaborate with multidisciplinary teams to develop individualized treatment goals that address medical stabilization, nutritional rehabilitation, and behavioral recovery.
  • Identify common co-occurring medical complications and diagnoses associated with eating disorders, and formulate appropriate management plans.
  • Apply a “Nutrition First” framework to support medical and psychological stabilization through renourishment, understanding that cognitive recovery follows physiological recovery.
  • Integrate strategies to empower caregivers as active partners in supporting meal completion, emotional regulation, and recovery consistency.
  • Describe appropriate outpatient medical monitoring practices, including vital signs, laboratory evaluations, and cardiac assessments.
  • Identify at least two essential ways that integrating family-centered care at higher levels of treatment strengthens discharge planning and lays the foundation for sustained, long-term recovery in the outpatient setting.
